Happy New Year 2011!
I just wanted to take a quick break from my current sequence of diabetic recipes and information to wish you, my friends, a safe, happy and prosperous New Year in 2011! This is often a time where we all pause and reflect on the year that has passed. To be quite honest, this year has been extremely hectic for me, with barely a day off, but it’s also been very rewarding! I’ve achieved a couple of things this year that I’m very proud of, such as winning my 1st pizza cooking competition a couple of weeks ago, as well as getting my own Pizzas And Parmas Cookbook self-published on Amazon. New Years Resolutions This is also a time where many people make a New Years resolution for the coming year. I rarely make new year resolutions, but a couple of goals that I have for the coming year include getting back into peak fitness again, and adding a Breakfast Pizza chapter to my pizza cookbook. I would love to hear about any resolutions you have, whatever it might be, in the comments section. I would especially love to hear if you have made any great achievements during this year that you are particularly proud of, and would like to share with me and the rest of our readers. Christmas Day Lunch – Seafood Feast 2010
Christmas is a time for getting together with family, sharing gifts, reflecting on the year that was, and of course, indulging in large amounts of food and drink! A traditional Christmas Day lunch in my family usually consists of a great big roast cooked up, often lamb or pork, with plenty of sides of salads overflowing on the table. However this year, Christmas day is a very hot, sticky and humid 38C here in Perth , so something a little different was needed. Christmas Lunch Ideas Basically once I heard the weather reports coming out in the previous week, I just knew it was going to be way too hot for a roast Christmas Day lunch. Out of all the Christmas lunch ideas I had, it really came down to a seafood feast for Christmas Day lunch . The Christmas Day Lunch Seafood Feast The reason I chose to have seafood is simply that it’s quick and easy to cook, as well as being a classic type of food to eat in Australia on any hot day, and seafood makes a great gourmet feast to indulge in. I got myself some Pink Snapper, a good thick fillet, and fresh from the seafood market early in the day. I also picked up some tiger prawns, all of the seafood is local produce for the freshest possible quality. Christmas Lunch Preparations Begin… Cooking Christmas Day lunch I start by marinading the prawns in some crushed garlic, chilli, basil, and a little olive oil and lemon juice. This is probably the hardest part of the day, which shows you why this is one of my favourite easy food recipes. Cooking the seafood is as easy as heating up a frypan to a medium-high heat, add a touch of oil, before adding the fillet of Pink Snapper. Just before adding the Snapper to the pan I seasoned it with some herbs and spices that I had lying around in my kitchen, like lemon pepper, just to add some nice flavour. Sear the fish for 3-5 minutes on each side, and because it was quite a thick piece of seafood I actually decided to finish it off in the oven to make sure it was cooked through properly. To do this I just added a little bit of water, almost poaching it in liquid, to keep the Pink Snapper nice and tender, moist and juicy (there’s nothing worse than dried out overcooked seafood).

The 96fm Breakfast Pizza Challenge
Finally, the day of my first ever pizza competition has arrived, and I was quite excited! As it was a competition to find the best breakfast pizza , naturally the pizza contest was going to be held very early in the morning, so I had to prepare myself for this a couple of days ahead. I often work late into the night, so getting up early is not always that easy. I set my alarm for 5am, as I had to be there by 6:15am, and it was a good 30-40 minute drive to get to the location. I got up bright and early with the sparrows, and just as the sun was rising, and began to ready myself. I didn’t really know what to expect, had no idea what my competition was going to be like, or how many people would turn up to watch! I was mostly excited, but there were a few butterflies in the gut as well. Arriving At The Breakfast Pizza Challenge Breakfast Pizza Challenge Competitors I was the first competitor to arrive as I got there a little bit early (6am), and the radio team were still setting up the work stations and equipment. All the ingredients were already supplied, so thankfully that was something that I didn’t have to worry too much about, all I had to do was rock up and cook Only a few minutes later my first competitor arrived, Emma, so we introduced ourselves and started having a sticky beak around the work area that was set up for us. Emma was making a breakfast pizza with the lot, basically every big breakfast type ingredient that you could think of all on the one pizza, so she had a quick look around to discover that unfortunately a couple of her ingredients were missing. A quick dash to the shops, and a call out on the radio by the DJ solved the ingredient issue, however a bit of stress had set in to start off the day. In the meantime, Chris, our other competitor had also arrived, so we met and had a quick chat about the upcoming pizza challenge as well. Chris was making a dessert pizza , with strawberries, chocolate, marshmallows and ice cream. The whole day was very friendly, and mostly relaxed, aside from Emma’s issues missing out on some of her ingredients, so we all just had a bit of fun together cooking up some pizzas … The Breakfast Pizza Challenge Begins… We were asked to begin prepping our pizzas, and straight away Emma and Chris began furiously working away and chopping up their ingredients. For me, I had made the Eggs Florentine Breakfast Pizza so simple and easy that I really didn’t have a lot to do, so I basically started putting some of the toppings on my pizza base and waited for some people to start arriving so I could cook the pizza and make sure it was hot and fresh for the first trials. Eggs Florentine Breakfast Pizza – The First Trial Breakfast Pizza Cooking In The Pizza Oven The first two pizzas were a bit of a disaster, as the pizza oven was a bit different to what I’m normally used to, and getting used to the Pizza Stone which was in the oven took a couple of attempts to get right. I burnt half of the bottom of each base, but luckily half was still good to use, so I kept one side and sneakily threw out the rest so that no one ever knew Just as I pulled the first pizza out (I was way ahead of the other two, they still hadn’t put anything in their oven yet) , the DJ asked me to come up to the booth and speak on air. So luckily for me I had my first piece to take with me and let him try, while I had a quick chat on the radio about my eggs florentine breakfast pizza creation .

Eggs Florentine Breakfast Pizza
Tomorrow is the day for the Big Breakfast Pizza Challenge , and I’m a little nervous but mostly excited. It’s the first pizza competition that I’ve ever been in, and I think it will be lot’s of fun! The battle lines have been drawn, and my weapon of choice will be the Eggs Florentine Breakfast Pizza . The Eggs Florentine Pizza Eggs Florentine Breakfast Pizza The concept is reasonably simple – a traditional eggs florentine is an English muffin, topped with wilted spinach, smoked salmon, poached egg, with some hollandaise sauce poured on top. The trick is, how do you put this on a breakfast pizza? Well, this is how I did it… There will no English muffin of course, that will be replaced by the pizza base. I cover the base with some spinach leaves, and then add some shredded Caboolture cheese over the spinach (it’s better to put the spinach under the cheese, to protect it from burning in the pizza oven) . Then I crack an egg, and carefully spread it around the pizza as best I can. This part is a bit messy, but that’s half the fun of it sometimes! Putting a poached egg on the breakfast pizza is out of the question I think. If you put a cooked egg on a pizza and then cook it again, it will just end up rubbery and terrible

Breakfast Pizza – Vegemite, Cheese, Eggs And Bacon!
Last week I mentioned that I entered a competition to find the ultimate breakfast pizza , and that I would test out a few different kinds. As a big lover of vegemite from a young age, this was always going to be the first place that I would start Breakfast Pizza With Vegemite – The Concept I love bacon and eggs on vegemite toast for breakfast in the mornings (I don’t do it very often, it’s just a special treat for every now and then) , and this seemed like a natural progression. It also should be noted that bacon and eggs work really well on a pizza. I’m not sure about whether other countries and cultures would traditionally have this combination on a pizza, but in Australia you can find this just about anywhere that sells pizzas, and it’s known as the Aussie Pizza! I’ve made all sorts of strange combinations of pizza, most have worked out pretty well, and some have been a total disaster . I’ve even made plenty of dessert pizzas, however breakfast pizza is a very new concept to me – but I’m loving it! (I’m even thinking of adding a new chapter to my pizza cookbook , a whole section dedicated to breakfast pizza). Vegemite, Cheese, Egg And Bacon Breakfast Pizza – The Result Breakfast Pizza - Vegemite, Cheese, Egg And Bacon My excitement was building as I began to put this new concoction together, and I was starting to gather some interested onlookers made up of the restaurant staff who wanted to see what I was up to. Their initial responses were a bit less than enthusiastic, but I took it all in my stride and carried on anyway. Anyone who knows vegemite knows that you really don’t need a lot, so I was careful to start with just a thin layer on the pizza base, before spreading the cheese on top. I cut up 2 rashers of bacon into cubes, which were then spread around. Lastly, I cracked two eggs, and spread them around as best I could (Note: 2 eggs is probably too much, one would have been enough).

The Ultimate Breakfast Pizza Challenge
Today our local radio station, 96fm , launched a competition to find the ultimate breakfast pizza . Naturally my mind straight away went into overdrive coming up with all sorts of ideas to try out. After some debate, and discussion with colleagues, I’ve narrowed it down to 3 different breakfast pizza options to test. It was quite busy tonight and I didn’t get a chance to make any of them, but over the next few days I will make them and post the results. In the meantime, here are the breakfast pizza ideas I came up with, please feel free to let me know your thoughts in the comments! Full Works Breakfast Pizza My initial thought was to put every kind of big breakfast ingredient together on the one pizza. I mean really, what’s better than a big breakfast in the morning to start off your day anyway?! This will include a napoli sauce and cheese base, with pieces of bacon, slices of mushroom, slices of a nice spicy sausage like chorizo, and a few cherry tomato halves scattered around. Add a few slices of par-cooked potato (to represent hash browns), crack a couple of eggs, and if you feel like it you could even dollop some baked beans around for good measure too! Egg And Bacon With Vegemite Breakfast Pizza To those uninitiated in the ways of the salty spreadable delight that is vegemite , this may sound quite strange as it is very much an acquired taste. Even when I brought this up with other vegemite-loving Aussies, a slight look of bewilderment was noticeable. For a long time, I have been a happy little vegemite , growing up with the stuff from a very young age. I remember my dad introducing me to eggs on toast for breakfast, with vegemite spread on the toast. I don’t often hear of others going to such extremes to get their vegemite fix, but to this day if I eat eggs on toast without vegemite, it just seems like there is something missing. So this was my next breakfast pizza idea . I have tried a vegemite and cheese pizza before, and it worked out wonderfully. This time I plan to add eggs and bacon to the mix, and see if that will also live up to my high expectations Eggs Florentine/Eggs Benedict Breakfast Pizza Ok, so this definitely comes in at the more “gourmet” end of the spectrum. I would probably like to make a half/half pizza and try both sides to see which I like better. Now, quite obviously there would need to be some hollandaise sauce on top, I’m just not sure if the hollandaise and the napoli sauce will work together, so I may end up trying both ways, with and without napoli sauce on the base

Simple Recipe For Easy Chocolate Fondue
